Well, it's been a year of taking and posting pictures. It was my 2011 New Year's resolution and one I actually stuck to! I hope you enjoyed the pictures over the past year. The ultimate goal of the blog was to get me to take more pictures and be the person who remembers her camera rather than the one who always leaves her camera at home. :) And I can say it has definitely helped me with that. So..... I haven't decided what format I will use in the future to share our photos/lives with all of you, but once I figure that out I will let you know. Thanks for following me on this year-long journey! :)

Our dinner tonight:
In a foil pouch, toss olive oil, red onion, bell pepper, raw jalapenos, cooked, and shredded chicken.

Top with mozzarella cheese, parmesan cheese, minced garlic, lime juice, 4 oz. cream cheese and cilantro. Oh and the secret ingredient.....
Wrap it all up in foil at bake at 250 for 20 minutes (flipping once) or cook same way on the grill.And the secret ingredient..... 3 oz. of tequila! (added before wrapping up and baking)
Serve on baguettes or add cooked pasta. Yum!

We had the standard black eyed peas and cabbage for good luck and money throughout the new year and we roasted our first chicken. It's kind of becoming something the hubby really enjoys- roasting turkeys and chickens. And it tasted soooo good! We'll be eating chicken for a while. :)

Dec. 31st
We started the New Year off right with a bottle of great wine (from our friend's family's vineyard) and ended 2011 with sushi from one of our favorite restaurants (where they know exactly what we're ordering and how we order it before we even sit down).
